This category of tea goes by many names in the West, yet it is one of the least well known here. This category of tea sits outside the classification of oxidation like the others and instead is based on the post fermentation process that occurs in the processing of *most* of these teas. 

It's always worth dipping your toes into this wacky world, to see what it's all about. Especially when it comes to Pu'er, this category of tea has plenty of depth that entice serious tea drinkers around the world.
